I am marking today as the beginning of my summer. I finished writing the last of my papers, I have 3 whole classes left to attend, and weeks of down time staring me in the face. I will spend it seemingly unemployed and reasonably poor. I am not sure I want it to happen, but it is.
Looking back on my freshman year of college, I know I made mistakes. Things happen, and sometimes we lose control of situations, but all in all I've done fairly well. I made it through the year, scholarship intact, and will start the fall a Sophomore. I changed my major twice, and am now following a life long dream path that revolves around food. I am not entirely sure what becoming a dietitian means yet, but I am certain that I will make the most of it while pursuing my passion.
I look at this summer like no other before it. It feels so strange to think that I'll be away from this apartment for three months. If I can help it, I'll come back up for an escape sometime in July. I really do adore this place and what it means to me. The freedom that I have here is not like anything i have ever experienced anywhere else.
I will be spending the summer mostly in the employ of my darling mother. Its the part of the 'job' that involves cooking that I am most excited about. I never realized how much I loved it until I stopped doing it almost daily. It seems like a foreign idea to not spend a good chunk of my time in a kitchen.
i suppose I should count this coming summer as a blessing. The next one I will spend here, taking classes in an attempt to get caught up. I hope that I can get in all the classes I need to, at the times that I need to take them. Darn University that only offers certain classes during certain quarters.
Fun news! I will be utilizing this thing a lot more over the summer, and will try and make it so habitual that it becomes part of my routine that I bring back from the summer. As you will soon see, there is a new 'Recipes' section to the site. I will be pulling a Julie and Julia type thing, and will be posting the recipes for dinner at least twice a week for the whole of summer. No specific source yet, but I promise that if its not my own, you'll know where it came from.
